Green Goddess Smoothie Bowl

A great way to quickly inject some tasty nourishment into your day. Feel free to use this recipe as a starting point for trying out new flavours, saving fruit and veg from going to waste and getting creative!

Why not try it with some protein powder or a selection of your favourite nuts?

Ingredients

T = tablespoon t = teaspoon

Smoothie mix:

  • A handful spinach

  • A handful chopped pineapple

  • â…” of a cucumber (roughly chopped)

  • ½ an avocado

  • 1 t spirulina

  • ½ a lime

  • 1 T peanut butter

  • ½ cup plant milk (oat or hemp best)

Topping:

  • Vegan granola (optional)

  • Dessicated coconut

  • Chia seeds

  • 1 passion fruit (halved)

  • Peanut butter

  1. Put all the smoothie ingredients in a blender and blend until smooth. The mixture shout be thick enough that if you drop a nut onto it, it doesn’t sink. If it’s too thick add a dash more of the plant milk.

  2. Fill up your fanciest small bowls with the smoothie mixture leaving 1cm gap at the top.

  3. Carefully coat half of the top of the bowl with desiccated coconut. You can dry toast it first if you’re feeling REALLY extra.

  4. Sprinkle a handful of granola along the line at the edge of the coconut, lump a dollop of peanut butter in the centre with a sprinkle of chia seeds and add one half of the passionfruit to each bowl. Enjoy!
